SydneyFork opened on the Pyrmont waterfront in 2019 with a simple wager: that serious food and serious play belong under the same roof. Seven years on, the house still holds.
We believe a great evening should feel like a well-played hand — measured, surprising, and impossible to walk away from mid-game. The kitchen deals in provenance. The salon deals in discretion. Both play to win your return.
The building began life as a wool-classing hall in 1926. The renovation kept the art-deco trusses and brick vaults, then ran a spine of modern services straight through the middle.
"We didn't want a restaurant that whispers. We wanted one that knows when to lean in."
Behind the dining room sits a working food lab: rotary evaporators for distilled vermouths, a centrifuge for clarified juices, and a fermentation wall that changes with the seasons.
House-distilled aromatics for the bar's signature vermouth blend.
72-hour short rib and custard-textured toothfish, held to the tenth of a degree.
Garums, misos and vinegars built from kitchen trim — flavour from what others discard.
Liquid-nitrogen finishes on the petit-four trolley, table-side.
Two partner farms within 90 minutes of the kitchen door. Whole animals, whole vegetables, zero excuses.
Beef, lamb and dairy from a single 400-hectare property we visit monthly — the menu follows their calendar, not ours.
Sydney rock oysters, kingfish and Glacier 51 toothfish landed within 24 hours of service.
Trim becomes garum, bones become jus, ends become staff meal. Our waste audit is published internally each quarter.
The room was acoustically modelled before a single chair was ordered. Conversations carry exactly as far as your companion's ear — and no further.
Business is discussed here. Cards are called here. What is said at the table stays there — the room makes sure of it.
Every piece on our walls is curated quarterly with a Sydney gallery partner — and every piece is for sale. Ask your waiter for the evening's catalogue.
Discretion is engineered into the building, the roster and the booking system — not just promised at the door.
Our confidentiality standards are written into every staff contract and reviewed by an external auditor annually. Members may request the full protocol document through the concierge.
